Victorinox Forschner 40135 Butcher Knife, Rosewood Handle, 8 Inch Straight Blade. The Victorinox 40135 Butcher Knife is a powerhouse player whether you're using it in a bustling restaurant kitchen or in your home as a complementary piece to your home processing kit. The go-to blade for sectioning out small portions from a larger cut, the butcher knife is a tried and true tool that not only served early mountain men in the wild, but has been tweaked and perfected over the years to tackle the toughest commercial kitchen tasks. Great for almost any meat processing application!
It has a rosewood handle, adding a touch of class to any culinary setting. As with all Victorinox knives, the handle is ergonomically designed to minimize wrist tension and provides a natural fit. Hand-washing of wooden handles is recommended.
The blade has an exceptionally keen, razor-sharp edge. The high carbon, stainless steel blade is hand finished by skilled craftsmen at Victorinox in Switzerland. A special tempering process is used to produce an edge that can be resharpened over and over again. Each Victorinox knife is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished.
This Victorinox product, which is made in Switzerland, has been marketed in the U.S. under the R.H. Forschner brand name since 1937. As of 2009, it is now being sold in the U.S. under the Victorinox brand name. It was Forschner 40135, and is now Victorinox 40135.
