The model 5661615 (formerly the 40019) has a rosewood handle, adding a touch of class to any culinary setting. As with all Victorinox knives, the handle is ergonomically designed to minimize wrist tension and provides a natural fit. Hand-washing of wooden handles is recommended.

The blade has an exceptionally keen, razor-sharp edge. The high carbon, stainless steel blade is hand finished by skilled craftsmen at Victorinox in Switzerland. A special tempering process is used to produce an edge that can be resharpened over and over again. Each Victorinox knife is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished.

This Victorinox product, which is made in Switzerland, has been marketed in the U.S. under the R.H. Forschner brand name since 1937. As of 2009, it is now being sold in the U.S. under the Victorinox brand name. It was Forschner 40019, and is now Victorinox 40019.

This is the only knife brand I use. I run a slaughterhouse. A high quality, razor sharp knife is crucial. My dad rail boned beef carcasses for fifteen years with this exact knife. I can tell if a person is a serous professional based strictly on the knife he uses.

Whether splitting a deer sternum, cutting a turkey in half, breaking a pelvis, of filleting red salmon, this knife will not let you down. This knife is the best knife ever manufactured for when you need to remove bones from an animal, this is what you use.

Someone suggested this model because the wood handle made gripping it easier, and i'm glad they did. Chicken is slimy when raw and this really does help cut down on the slipperiness factor. That said, sharp blade, great for boning.
