The Old Hickory 7-7 (OH77) is a professional Butcher knife with 7 inch blade that is 100% American Handcrafted. This USA Made knife has a full-tang high carbon steel blade and a genuine hickory wood handle. The blade is tempered and hand ground to retain sharpness, and the handle is flame burnt and buffed for a unique antiqued finish.

Ontario Knife has been manufacturing "Old Hickory" kitchen knives for over 100 years - in fact since 1889. The "Old Hickory" knives have stood the test of time and proved themselves as the best carbon steel kitchen knife sold today. Each "Old Hickory" knife is made with 1095 carbon steel, fully heat treated and tempered to provide a razor sharp cutting edge which is easily sharpened when needed. The knives are fitted with an attractive hardwood handle branded "Old Hickory" and secured with brass compression rivets. Caution, high carbon steel will rust if not properly cared for. Clean and oil after use, and keep out of the dishwasher.

This is a nice, reasonably priced, carbon steel butcher knife. The 7" blade is great around the kitchen for chopping meat and veggies, and with the addition of a quick and dirty homemade sheath, is a handy knife for taking to the woods. I've mostly used it in this last capacity as a light machete to clear bramble shoots out of my way when exploring deer trails and the like, but it does fine at fire starting and general knife use after a few tweaks (below).

Out of the box, this knife is decently sharp with a tough but relatively shallow edge angle and a fairly crude point. Some quality time with a WorkSharp brought the edge to a steeper (~25?) and sharper state; I worked the back of the blade to square/sharpen the spine and to get the point to be more useful too. The handle scales were improved with a bit of light sanding as well (no hotspots now).

The blade steel is pretty standard fare, so benefits from frequent touch ups in kitchen use, and starts to rust/patina pretty quickly. No surprises there, but be forewarned. In all, this is an inexpensive yet charismatic knife that will serve you well.

These knives are great and will last a lifetime or two. They do take some extra caring for but as long as you keep them dry they will never rust.
