The Victorinox 40191 Butter & Cheese Knife is one of those excellent additional blades that you'll be happy you've got on hand. Offset to let you slice all the way through product without pushing your knuckles into what you're cutting, this butter and cheese knife measures 8 inches from tip to handle and is superbly suited to tackle the tasks you throw its way.

It has a rosewood handle, adding a touch of class to any culinary setting. As with all Victorinox knives, the handle is ergonomically designed to minimize wrist tension and provides a natural fit. Hand-washing of wooden handles is recommended.

The blade has an exceptionally keen, razor-sharp edge. The high carbon, stainless steel blade is hand finished by skilled craftsmen at Victorinox in Switzerland. A special tempering process is used to produce an edge that can be resharpened over and over again. Each Victorinox knife is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished.

This Victorinox product, which is made in Switzerland, has been marketed in the U.S. under the R.H. Forschner brand name since 1937. As of 2009, it is now being sold in the U.S. under the Victorinox brand name. It was Forschner 40191, and is now Victorinox 40191.
