Victorinox Forschner 40131 Cimeter, Rosewood Handle, 10 Inch Blade. The Victorinox 40131 Cimeter Knife puts a welcome twist on an old classic. Equipped with all the benefits of the traditional butcher knife, the cimeter's blade has the added benefit of a curve coming to a fine tip. This gives the knife the ability to chop and separate like a butcher knife, but also allows for a long, solid slicing stroke that is perfect for creating thin delectable slices from your meat of choice. Further adding to this knife's ability to master the meats of your kitchen, the stamped blade is conveniently sized at 10 inches.

It has a rosewood handle, adding a touch of class to any culinary setting. As with all Victorinox knives, the handle is ergonomically designed to minimize wrist tension and provides a natural fit. Hand-washing of wooden handles is recommended.

The blade has an exceptionally keen, razor-sharp edge. The high carbon, stainless steel blade is hand finished by skilled craftsmen at Victorinox in Switzerland. A special tempering process is used to produce an edge that can be resharpened over and over again. Each Victorinox knife is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished.

This Victorinox product, which is made in Switzerland, has been marketed in the U.S. under the R.H. Forschner brand name since 1937. As of 2009, it is now being sold in the U.S. under the Victorinox brand name. It was Forschner 40131, and is now Victorinox 40131.
